It's easy to adapt to whatever toppings you like.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1 semolina loaf (you could really use anything...i used a semolina loaf about 14 to 16 inches long), split in half (so you have two long halves)&lt;br /&gt;Pizza Sauce (I like Pizza Quick and Contandina)&lt;br /&gt;Fresh Mozzarella (this really makes the difference with pizza, but if i'm trying to be economical, I just use Target &lt;br /&gt;1 large yellow onion, sliced and cut into half moons (so big pieces)&lt;br /&gt;10-20 kalamata olives, split long ways&lt;br /&gt;Parmesan cheese&lt;br /&gt;Olive Oil&lt;br /&gt;Dried basil, garlic, and oregano to taste!&lt;br /&gt;Salt &amp; Pepper&lt;br /&gt;&lt;br /&gt;Coat a medium sized non stick skillet in a little olive oil and add the onions, breaking them up as you add them in.  Salt &amp; pepper it.  Turn the heat to about medium and cook for 15-20 minutes.  You want to slow cook them so the caramelize.&lt;br /&gt;&lt;br /&gt;Preheat the oven to 400.  On a cookie sheet (I put foil on mine to make it easier to clean), build your two pizzas.  Sauce, then the mozzarella, olives, and onions (make sure to lift the onions out of the oil and not dump them on ).  Top with spices and parmesan cheese.  You can also do the spices afterward, and add more parmesan after cooking.  I then topped it with a little sea salt.  &lt;br /&gt;&lt;br /&gt;Bake for 10-15 minutes.  This serves two - four.  You could also put some olive oil on the loaf to make it crispier, but I tend to shy away from making my food oiler than it needs to be. When the oil is hot but not smoking, cook the onion slices until lightly browned, about 5 to 7 minutes. Add the garlic, saute for 2 to 3 minutes more, and then pour in the wine. Reduce the heat slightly and simmer the mixture for 3 to 4 minutes. Add the diced tomatoes and herbs.&lt;br /&gt;Pour in the fish stock or water and then add the clams and mussels (if using). As soon as the clams and mussel shells open, add the shrimp and simmer just until shrimp are pink. (If you're not adding clams or mussels, you can add shrimp right after you've added the fish stock.)&lt;br /&gt;Season with salt and pepper and serve hot. If you like, add a toasted slice of a thick, hearty rustic bread beside each serving.&lt;br /&gt;Buy mussels the day you plan to use them. About one hour before cooking, scrub mussels with a brush (no soap!) under cold running water to get rid of grit and pull off the fringed byssus (also called a beard) or scrape it off with a knife. Keep them in a bowl of ice water until they go into the pan. The mussel shells will open during cooking. If any mussel doesn't open, toss it.&lt;br /&gt;--------&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Disaster Kitchen Notes:&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;I used extra tomatoes...more like 20-25 ozs. For the protein, I used 1.5 lbs of shrimp, 4 clams, and 5 ozs of red snapper that I had leftover in the freezer. &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Clams: they must be cleaned...you take two bowls of cold water...put the clams in one bowl and move them around, transfer them to the second bowl and do the same. Toss out the water from the first bowl and fill it with fresh. Repeat until the water in one bowl is clean. Include lime rind (just toss it in the bag whole). Refrigerate for 1 hour. Remove shrimp from marinade and grill. Cook remaining marinade and onions in a non stick skillet (discard lime rind). Bring to boil and cook until onions are soft and transparent. Start on either 375 or low broil, and increase to high broil at the end if it needs more crisping. Cut in to small pieces.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;In a separate bowl, stir together the Miracle Whip, Grey Poupon, apple cider vinegar, and parsley. Then, slowly add the olive oil and stir or whisk vigorously until all combined. Add salt and pepper to taste. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;In a large bowl, mix together the potatoes, bacon, eggs, and green onions. Then stir in half of the dressing. Taste...you'll probably want to add in the rest of the dressing, but it's better to have to little and add more, then have too much! You can even make more dressing if you need it. Spray 2 muffin tins with cooking spray. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;In a blender mix the half-and-half, eggs (beat in a separate bowl first), smoked Gouda, nutmeg, green onions, spinach, salt, and pepper. Blend for about 30 seconds. Then roll out the first pie crust (if it cracks, it may still be too cold, so just let it rest another 5 minutes or so). Roll out the dough so it is all the same thickness. Using a drinking glass or cookie cutter with a 3 1/2 inch diameter, cut circles in the dough. Then, carefull peel them, one by one, from your work surface (I worked on a silpat mat), and fit them into each muffin cup. They won't fill the entire cup. Then take the left over scraps, roll it up into a ball, nead it a few times, and then roll it out to make more.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;After you have a pan filled, take a spoon and fill the pie crust cups. You can fill it to the top of the pie crust. Then, top with first grated cheese and then a piece of sun dried tomato. Then, bake for 20 to 25 minutes. You know they are done when the crusts are done on the bottom, so just use a fork to flip one up and see if it is still translucent or if it's gotten slighly golden. It should be golden. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Repeat with other pie crust. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Serve heated or at room temperature. Sprinkle a little salt on before serving. Immediately after I reheat these for serving, I plan to top them with a mixture of shredded Gouda, grated Parmesan, salt, pepper, and a dash of nutmeg. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Variation: Instead of pie crusts, you could substitute puff pastry sheets. Boil. Cook the rigatoni (don't cook it too long because you don't want it to fall apart when you're trying to stuff it).&lt;br /&gt;&lt;br /&gt;Cook the meat in a non stick skillet and half way through cooking add the onion. In a large bowl mix all the "meat filling" ingredients, including the meat and onion you've cooked. Mix thoroughly and let cool.&lt;br /&gt;&lt;br /&gt;Drain the pasta and rinse with cool water.&lt;br /&gt;&lt;br /&gt;Once everything is cooled, you can start filling the shells. I just did this by hand. The meat mix was too thick to go through a pastry bag.&lt;br /&gt;&lt;br /&gt;You could put all the noodles in one large lasagna pan, or you can use gratin bakers. I used the all-clad ones with the handles. I just kept it to basically one layer of noodles in two gratin dishes, and then I went ahead and layered the rest in another dish.&lt;br /&gt;&lt;br /&gt;Back in your non stick skillet heat the tomato sauce and add any lefter over meat mix. Add any seasonings that you think it needs. Then pour the sauce evenly over the filled pasta. You definitely don't need it swimming in sauce, and if you've used shallow bakers this won't be an issue. Then top with sliced mozzarella.&lt;br /&gt;&lt;br /&gt;At this point, you can either cover everything and put it in the fridge, or you can go ahead and bake it immediately. Bake at 375. If you've refrigerated, bake for about 20-30 minutes (if the cheese browns too quickly, cover with foil sprayed with cooking spray). Scramble the eggs in a bowl, and then pour them into a hot, non stick skillet so that they form a thin coating on the pan. Once cooked, remove and break into small, bite sized pieces. In a wok (or non stick skillet), put on medium heat and add peanut oil and saute the onions for several minutes, and then add in the garlic, carrots, and ginger. Continue to cook for about 3 minutes. Then add in the mushrooms and continue to cook for about 5 minutes on medium to low. Then add the soy sauce and stir. Then turn the heat to low and add in the cooked eggs and green onions, then add in the rice. Stir fry for two to three minutes until everything is mixed and the rice is heated through. &lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;For the stir fry...in a wok (or non stick skillet) over medium heat add the peanut oil and the chicken tenders (with the teriyaki sauce). Once the chicken is almost cooked through, add the onions. Cook for 3 minutes, then add the ginger and Chinese five spice. Cook for 3 minutes, then add the chicken stock and veggies (veggies should be thawed in the microwave). Cook for several minutes. Taste and add teriyaki if necessary. In a stand mixer, mix the oil and warm water, then whisk in the yeast. Then stir in the flour by hand, and then fit the dough hook on the mixer and mix on medium speed until the dough works it's way up the hook. If it doesn't work, add more flour gradually. This shouldn't take more than a few minutes. Dough will be sticky. Let rise, covered for one hour.&lt;br /&gt;Then punch down and divide in half. Keep other half covered with plastic wrap sprayed with cooking spray. Use flour and roll out first half into a a circle on floured surface. To about 1/4 inch.&lt;br /&gt;&lt;br /&gt;Filling&lt;br /&gt;2 cups pizza sauce, plus extra for dipping&lt;br /&gt;2 cups mozzerella or pizza mix cheese, shredded&lt;br /&gt;24 pepperoni slices&lt;br /&gt;2 tsp dried oregano&lt;br /&gt;2 tsp dried basil&lt;br /&gt;Olive oil for brushing&lt;br /&gt;&lt;br /&gt;On one half of circle, leaving about a 2 inch edge, layer 1/2 to 1 cup of sauce, 1/2 to 1 cup of mozzerella or pizza cheese, and 12 sliced pepperoni slices.&lt;br /&gt;&lt;br /&gt;Fold and turn the edges. Salt and  pepper it.  Then add in the ginger and garlic and carrots. Cook for a few minutes. And then add the chicken stock and bring to a boil.  Add the vermicilli uncooked. Don't break it, just ease it in. Boil for 5 minutes. Check the pasta to make sure it is cooked.  Then turn down the heat and add the green onions. Season to taste. Turn off the heat. They have fantastic service, ambiance, and of course, food. We've eaten here many times, so I can comment on several different dishes! All entrees come with soup or salad and a side.&lt;br /&gt;&lt;br /&gt;French Roquefort Salad - iceberg wedge smothered in French dressing and roquefort blue cheese crumbles and dressing, along with carrot ribbons, tomato chunks, cucumber, and croutons. Best enjoyed with extra blue cheese dressing on the side. This is really our favorite salad ever!&lt;br /&gt;&lt;br /&gt;French onion soup - Chris always ordered this...he substitutes his entree side for this soup, so he can get the salad and the soup. One time it tasted burned, so he returned it. They told us it was the end of the pot, so that was probably why. Otherwise, it's always been tasty!&lt;br /&gt;&lt;br /&gt;8 oz fillet - we almost always get this steak...it's amazing. They often have fillet specials, like&lt;br /&gt;&lt;br /&gt;Pan Fried Walleye - it has a fantastic lemon-wine reduction, and the fish is lightly breaded and fried, and it comes in two long strips, a lot of food!&lt;br /&gt;&lt;br /&gt;Specials -&lt;br /&gt;Fillet and shrimp skewers, very tasty if you aren't in the mood for a big steak&lt;br /&gt;Pork Tenderloin - very tender, comes sliced and covered in a cherry sauce&lt;br /&gt;Fillet encrusted with peppercorns in a mushroom sauce - this was really good, it was a darker mushroom sauce, and we asked for light peppercorns which was key!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Drinks:&lt;br /&gt;Molly Ringwald - not my favorite, but stiff and a great value for a martini&lt;br /&gt;Cadillac Cosmo - vodka, flavored martini, awesome, tangy&lt;br /&gt;Moviestar Cosmo - ginger infused vodka, awesome, pricey&lt;br /&gt;&lt;br /&gt;Even the bread they bring out at the beginning is fantastic...eat it right away, while it's still hot!&lt;br /&gt;&lt;br /&gt;For weekends and game nights, reservations are a must. Let simmer for about 10 minutes, then add the meatballs and heat if necessary (meatballs can be made in advance and heated in the sauce) . Then arrange noodles in a bowl, and add the sauce with the meatballs. If it seems like there is too much moisture, add some bread crumbs.  Then roll them into balls.  You can make them whatever size you like, but they do get somewhat smaller in the oven.  Line the pan with tin foil and spray it with cooking spray. It's easiest to use a stand mixer with the dough hook attachment. First, add the warm water, and then wisk in the yeast. Then add the oil. Separately, mix the flour and salt. Then add the flour to the water mixture and mix until the dough forms a ball and works its way up the hook. If this doesn't happen, add some more flour, gradually, until the dough moves up the hook. It should still be sticky. Then you need to let the dough rise for 1 hour, covered.&lt;br /&gt;&lt;br /&gt;After it rises, flour your hands and punch it down with your fist. Then roll out the dough into a circle or a rectangle, onto a floured surface.. Just take your time, it'll roll out. If you're having problems, let the dough rest for a few minutes. Once you get it rolled out to about 1/4 of an inch, start topping it like a pizza. You can add a little sauce if you want, but it really isn't necessary. Just layer the ingredients all over the dough. Then, you want to roll it up. It's tough, but do your best...it doesn't matter if it's not perfect. You just want to start with one of the long sides, and roll it as tight as you can. Once you are done, cover it with plastic wrap sprayed with cooking spray, and then let it sit for about one hour. Then brush on some olive oil on the top.&lt;br /&gt;&lt;br /&gt;Bake on 425 for about 20 minutes or until lightly browned on the top. I put it on my pizza stone on my plastic oven liner, and moved it in and out of the oven on a pizza peel. But you could easily put it on a cookie sheet, but I would line it with parchment paper. It'll make it easier to move it when you get it out of the oven so that you can cut it without scratching your pan!&lt;br /&gt;&lt;br /&gt;To eat it, just slice it like a jelly roll cake or a loaf of bread. Serving it with a little pizza sauce is fantastic. Enjoy!&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;Substitutes - you can really do whatever filling you want! We LOVED it. We not only went to Oktoberfest, but we also explored Munich and a few small places outside the city. The food, and of course the beer, really stood out. I love German beer, especially weissbier, or wheat beer. Most of the German breweries offer a weissbier, and it is typically served by the half liter. Regular German beer is usually served by the liter.&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;At Oktoberfest, they do not allow people to walk around with beer. This is most likely because all the beer is served in glass mugs or steins, and therefore they want you to keep those within each beer tent. Stealing of these glass steins is common, but private security is tough watching over the exits of each beer tent. &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;In addition to the many large beer "tents" (they are really like big convention halls with bare wood floors and lots of picnic tables), Oktoberfest is filled with amusement rides and many, many food stalls. I used a small pot for the pasta and then I used a large, 5.5 ct le creuset pot for the rest. Start heating up the water for the pasta, and then in larger pot, heat up a little oil and then start browning the sausage over medium heat, about 10 minutes. While that's cooking and the water is heating up, mix the cheeses, including the ricotta and the herbs in a bowl. Also, pop the peas in the microwave to thaw them. Once the sausage starts to brown, add in the chopped onion. Once the onions are softened and the sausage fully browned, add the cheese-herb mixture and mix over low heat. Once the pasta is cooked, drain and add to the other ingredients in the large bowl. Mix, keep over low heat. Add the peas and mix again. Put a lid on the pot and let sit for about 10 to 15 minutes just to set a bit. Then serve. Add some freshly grated parmesan or asiago cheese on the top and add salt to taste. Instead, I will share my own recipes, often inspired by others. I always modify things and make them into my own creations, and I've always wanted to write them down. Here is my chance.
